Saltpeter meat is rooted in the tradition of Trentino a northern region of Italy. Since the 15th century, the inhabitants of Trentino have been using salt to preserve meat during the harsh mountain winters, which, in turn, enhanced the flavor. More spices are added to the simple brine, and the saltpeter tradition was born.
