STRAIGHT NEAPOLITAN SAUSAGE
Tasty and versatile, the straight Neapolitan sausage offers – in its semi-aged variation – a softer slice than salami; indeed, it can be considered a cross between sausage and salami. This product comes from roughly minced premium pork cuts (shoulder, pork belly, and ham trimmings) with the addition of chili, sweet pepper, and other spicy flavors. Stuffed in a straight casing, it is then dry aged in our facility of Pontassieve (Florence).
